Autumn Waffles

Prep time: 10 minutes

Cook Time: 20 minutes

Serves: 6

I like to eat a hearty, healthy breakfast. I have been experimenting with different ingredients. This waffle is full of omega 3 fats, 2 whole grains, and even bean flour.

These are super healthy, stick with you until lunch time and taste great!

3 ½ cups oatmeal

1 ½ cups garbanzo flour

2 Tbsp chia seeds

2 Tbsp flax seeds

2 tsp baking powder

2 tsp baking soda

1 ½ tsp salt

1 Tbsp cinnamon

2 Tbsp vanilla

4 cups water

1 cup applesauce

½ cup pecans

Put all ingredients in a blender and blend until smooth. Spray waffle iron with cooking spray. Pour batter into the waffle iron and sprinkle a few chopped pecans on the top of the batter. Close waffle iron. Cook until crisp.
