Aunt Mary’s Italian Red Sauce

Serves: 8
1 onion, chopped
2 stalks celery, chopped
2 cloves garlic, chopped
1 lb fresh mushrooms, chopped fine
3 tbsp olive oil
4 tbsp fresh parsley chopped or 1 Tbsp dried
½ tsp sage
½ tsp thyme
¼ tsp allspice
½ cup dry cooking wine
2 14.5 oz cans tomato sauce
3½ cups water
1 28 oz can stewed tomatoes
Sauté onions, celery, mushrooms and garlic in olive oil until brown. Add spices. Cook for 3-5 minutes. Add cooking wine and tomato sauce, tomatoes and water. Let simmer for 2 hours or overnight in crockpot. Serve over your favorite pasta.
