Cilantro Lettuce Wraps

1 head Romain lettuce

1 small purple cabbage, break off 8-10 leaves, chop the remainder

1 tomato diced

1 cucumber diced

3 carrots grated

½ cup kalamata olives, pitted

1 cup micro greens or sprouts

4 cups cooked angel hair pasta

Arrange all on a large platter and serve with Cilantro Dipping Sauce

 

Cilantro Dipping Sauce

1 bunch cilantro

1 lime juiced

1 clove garlic minced

1 tsp chili powder

½ tsp cumin

½ tsp salt

1/3 cup water

1 avocado mashed

Put all ingredients except avocado in food processor and process until smooth. Add avocado.
